This sounds like a pretty cool idea, very well thought out. I'd definitely be interested in either participating as a puzzler or watching the stream. As an added note, it might be good to also save the video from the stream to later be uploaded as a video, so people who were unable to watch the event live could still enjoy it.

Twitch saves the stream as a VOD on their site, so others can see it. So that can most certainly be done.
